Bacon Wrapped Stuffed Meatloaf
This recipe is based on an FB post I saw. I tweaked it to include whatever ingredients I had in the fridge.
Preheat oven to 350 degrees.
Ingredients, 2 lbs ground beef, 1 onion, 1 1/2 peppers, 1/2 lb bacon, shredded cheese
Line one baking pan with foil and another with parchment paper.
Saute' one onion, approximately 1 1/2 peppers and 2 handfuls of fresh spinach.
I started by sautéing the peppers and onions first, then added the spinach in as it doesn't take as long.
While the veggies are cooking, mix ground beef with seasonings of choice. I used ground pepper, garlic and onion.
Once ground beef mixture is blended, spread meat mixture on parchment line pan
Top ground beef with cooked veggies and shredded cheese.
Use parchment paper to help roll the ground beef into a meat roll up.
Transfer meat roll to bacon lined pan and wrap meat roll with bacon leaving foil on.
Bake for 20-30 minutes with foil on then remove for remaining time. I broiled for 10 minutes on low at the end to crispen up the bacon a bit.
