Gluten Free Sugar Free Peppermint Brownies

Who doesn’t love a good brownie right?

We are not gluten intolerant but really, our bodies were not made to break down the 44 chromosomes that are in today’s wheat flours.  Original Einkorn flour has 14 chromosomes which is so much easier on our bodies because after all, that’s what is was designed for. 

Anywho, we have cut out most wheat, pasta and rice items where we can but that doesn’t mean we’ve had to scrimp on dessert.  It also doesn’t mean that we don’t cheat and eat a little wheat, pasta or rice on occasion. 

One of our favorite sweet tooth items to make is these gluten/sugar free peppermint brownies.

They taste amazing and are keto friendly.

Ingredients are pretty simple:

2/3 cup coconut oil

½ cup hot water

2 eggs

¾ cup cocoa powder

½ teaspoon baking soda

1 cup stevia

1 1/3 cups almond flour

1 teaspoon vanilla

½ teaspoon salt

3-6 drops Vitality Peppermint Essential Oil

Preheat oven to 350 degrees.  Lightly grease 8” square pan (I use Pam baking spray)

Mix dry ingredients together.  In a separate bowl melt coconut oil then whisk in hot water and eggs (room temperature)

Combine ingredients and pour in to greased pan and bake for 30-40 minutes.

Allow brownies to cool before cutting in to squares
