Beauty Berry Jelly - Sugar Free

 

I don’t know about you but the Jam vs Jelly sometimes gets me all mixed up.

So what’s the difference?

Jelly is made using fruit juice, while jam is made using whole fruits that have been smashed or crushed

Now that we have all the confusion cleared up, let’s get to the recipe shall we?

Beauty berry has a very unique taste so it’s not for everyone.

Beauty Berry Jelly

8 cups water

6 cups beaty berries

2 cups monk fruit (or other sweetener)

6 teaspoons Xantham gum

Start with 8 cups of water and 6 cups of beauty berries. Simmer until it’s reduced by 1/3.

Strain the berries so you are left with only the juice (I had 6 cups of juice)

Add the xantham gum and simmer until it starts thickening.

Add to jars and refrigerate.

Note: the jelly may only thicken once it’s refrigerated. Not sure why but all my beauty berry is that way.

After simmering, you see that all the color has been removed from these beautiful berries. This can be discarded.

The juice from the berries will be a brownish/burgundy color
