Gluten Free, Sugar Free Muffins

These muffins are so easy and very tasty. You can mix it up a bit with whatever nuts and dried fruit you like


Gluten Free, Sugar Free Muffins

Makes 1 dozen

1 1/2 cups oatmeal (be sure to use the one marked ‘gluten free’)

1 teaspoon ground cinnamon

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon of salt (I don’t add salt)

2 eggs

1 cup unsweetened applesauce

2/3 cup monk fruit (or sweetener of choice)

2 Tablespoons coconut oil (or oil of choice)

1 teaspoon vanilla

1 cup shredded carrots

1/3 cup dates (use can use raisins, currents etc)

1/3 cup chopped walnuts (pecans are also a good choice)

1 Tablespoon unsweetened coconut flakes for garnish

Note: you can also add, sunflower seeds, chia seeds, etc

Add oatmeal, cinnamon, baking powder, baking soda, and salt to blender and mix well.

Add all other ingredients and blend.

Pour into lined muffin tins.

Bake at 350 degrees for approximately 15 minutes - check with toothpick for doneness
