Fruit Compote

Fruit compote is so easy to make and has a variety of uses I’ve used it as a cheesecake topping but our main way to use it is on our yogurt. Strawberry is hubs favorite but you can use whatever fruit you desire

Strawberry Compote
approximately 2 1/2 cups strawberries

1/2 cup truvia (I prefer to use honey but you can use sweetener of choice)
1 Tbsp water
1Tbsp fresh lemon juice
2 tsp arrowroot powder

simmer strawberries and water for approximately 30 minutes stirring occasionally.  Use stick blender or potato masher to chop berries.  Add lemon juice and arrowroot powder and mix well.
Cool and serve on cheesecake
