Whey Probiotic Lemonade

I’ve been making greek yogurt for a couple years now and I alway have about a cup or so of whey after straining it to make Greek yogurt. I knew there had to be a whey to use this bi-product.

In the early days of yogurt making I simply gave it to the animals. At first they weren’t big fans but they grew to love it. Despite the fact that they were getting some good probiotics, it still bothered me that I couldn’t find a more useful way to utilize it.

My search finally paid off when I found a probiotic whey lemonade!

The first batch I followed the recipe step by step even the step that said to store the lemonade in those adorable soda bottles.

The Ingredients are simple

6 cups Water, 1/2-3/4 cup Whey, 1/2 cup Lemon Juice and 3/4 cup Sugar or 2/3 cup Honey

Heat 6 cups of water to just warm enough to melt the honey or sugar.

Mix in all the ingredients and let it ferment on the counter for a few days.

I no longer use the soda bottles during the fermentation process as I had one explode leaving a mess and shrapnel pieces EVERYWHERE! We were finding slivers of glass for a couple weeks and in places I would not have never have thought they would end up. Luckily we were not home at the time, but WHAT A MESS!!

This round I chose to use a 1/2 gallon mason jar with a breathable lid (coffee filter). I use this method when making kombucha so I’m hoping it will work the same for the lemonade. Anything is better than an exploding lemonade!

 

Notes:

The original recipes I used called for 1/2 cup cane juice or 1 cup of honey. The honey batch was too sweet for my liking and the suar recipe just needed a little more flavor

It also called for a 1/2 cup of whey but I had extra so I added a little extra to each batch.
