Sugar Free Cheesecake

 
 

Sugar Free, Gluten Free Keto  Cheesecake

Crust
2 cups Almond flour
1/3 cup butter
3 Tbsp Erythritol (I use Truvia or other sugar substitute)
1 tsp Vanilla

Filling
32 oz cream cheese softened
1 1/4 cup powdered erythritol
3 large eggs
1 Tbsp lemon juice
1 tsp vanilla

Preheat oven to 350.  Grease 9" springform pan

To make crust mix all items together and press into bottom of pan.  Bake 10-12 minutes until barely golden.  Allow to cool at least 10 minutes

Cheesecake
combine cream cheese and sweetner until fluggy.  Beat in eggs one at a time.  Blend in lemon juice and vanilla
Pour mixture in to crust
Bake 50-55 minutes until center is almost set but still jiggly
Remove from oven and allow to cool to room temperature and then refrigerate for 4 hours or longer before serving.  Add topping as desired
